For Ganesh chaturthi,I made purana kozhukattai and sundal as I make every year.Usually I make it with Idiyappam flour.As I ran out of the flour,today I made it with store bought regular rice flour.The end result is a very tasty kozhukattai and I didn't feel any difficulty to make it.It was same like how I made it with idiyappam flour or processed rice flour.We all enjoyed it very much.Here follows the recipe.
Ingredients
For the puranam/stuffing
- Shredded coconut -1 cup
- Jaggery(grated) -1/2 cup
- Cardamom powder(elachi) -1/2 tsp
For the outer layer
- Rice flour -11/2 cups
- Salt -1/2 tsp
- Oil- 1tsp
- Water -21/4 cups
Method
Make the jaggery syrup by adding little water and keep in the microwave oven for 2-3 mins.
Strain the jaggery syrup with a tea strainer,mix it with the shredded coconut and add the cardamom powder.If the consistency is loose keep it in the microwave for 2 mins or till it reaches the desired consistency.
Boil 21/4cups of water with 1 tsp of oil.Add salt to the flour and slowly add the boiling water carefully,mix carefully with the help of a spatula.Let it sit for 2-3 mins to become warm.Once it becomes warm knead it to a smooth soft dough.
Make a small ball out of the kneaded dough and flatten into disc with the fingers by applying oil to the fingers.Fill the disc with the stuffing and close the edges by pressing.Arrange it in a idly plate and steam it for 10 mins.
Transfer it to a plate.Enjoy it warm.
- Sprinkle some water in the dough if it gets dried.
- Amount of water varies so add the water slowly and reserve some hot water.
