My mom used to make this recipe often for lunch box when I was going to college.She got this recipe from a cookery show in T.V.It is a healthy rice and doesn't need any extra side dish.The freshly ground coriander leaves mixed with the spices and the lemon juice gives a nice aroma and taste to this rice.
Ingredients

Coriander leaves | 2cups |
Onion | 2 no.(medium size) |
Ginger&garlic paste | 2tsp |
Green chilly | 5-6 |
Potato | 1no. |
Yellow peas(soaked&cooked) | 1/2cup |
Cloves | 2nos. |
Cinnamom | 1 inch piece |
Lemon juice | 2tsp |
Cashews | to garnish |
Oil | 2tbs |
Salt | to taste |
Method
Cook the rice in the cooker and spread it in the plate to get the grains separated.Slice the onions finely.Cook the peas and potato separately and cube the potato into bite size pieces.Grind the coriander leaves,green chillies and salt together to make a fine paste.
Place a pan,heat the oil and season it with cloves and cinnamon.Fry the onion and follows the ginger&garlic paste.
Now add in the ground paste and let it boil for 2-3 mins.Add the cubed potato and peas to it and mix it well.
Switch off the stove and finally add the lemon juice.Mix it with rice gently.
Garnish it with fried cashews.
Coriander rice is ready to enjoy.
- Lemon juice should be added after switch off the stove otherwise it will become bitter.
- Basmathi rice makes this recipe more flavorful.
- Tomatoes can be added for extra taste.
