Everybody likes potato in any form and my son's one of the favorite vegetable too.This is my mom's recipe and she used to make it frequently, when I was going to college since this is liked by all of my friends especially hostelites.Whenever she made this curry,I carried two lunch boxes (one box full of this curry and one lunch box for myself).This curry is a favorite, not only for my friends its for me too.I like to have it with sambhar rice.The plumpy green peas and the aroma of ginger and garlic,spiciness from the chilly powder gives an excellent taste to this recipe.

Tomatoes | 2nos.(medium size) |
Ginger&garlic paste | 2tsp |
Chilly powder | 1tsp |
Coriander powder | 11/2tsp |
Garam masala powder | a pinch |
Turmeric powder | 1tsp |
Asafoetida | a pinch |
Mustard seeds | 1tsp |
Fennel seeds(sombhu) | 1/2tsp |
Curry leaves | 1sprig |
Coriander leaves | |
Oil | 3tbs |
Salt | to taste |
Method
Boil the potatoes in the pressure cooker for 1-2 whistles or cook it in the microwave oven and cut it into bite sized pieces.Chop the onion and tomato into a fine pieces.Place a wide mouthed pan on the stove and 2 tbs of oil.Once the oil is hot season it with sombu ,mustard seeds,asfoetida and curry leaves.Add in the chopped onions and saute till it becomes transparent then ginger&garlic paste and follows the tomatoes.
Now add in all the powders and give it a stir and a 1/2 cup of water and green peas.Let it boil till the raw smell goes off.Now add in green peas and cook it for 2-3 mins.Then add the cut potatoes to it and mix it gently without breaking the potato pieces and cook it for 3-4 mins.
At this point add the remaining 1tbs of oil and reduce the flame to medium and cook it for 5 mins.Stir the curry in between two times to avoid burning.Garnish it with coriander leaves.
Enjoy this curry with sambhar rice or any of you choice.
- Dried peas can be used for this recipe(needs to be soaked and cooked).
- Adding whole garam masala gives a nice flavor.
- Coconut paste(2tsp) can be used for an extra taste .
